Onions for immune health…

This time of the year your immune system can do with every extra help it can get. Your immunity is going through all kinds of battles between the sugar and alcohol overload following Christmas and the festive season, the dark days, less vitamin D, less sunlight and fresh air, more central heating, more late nights, less movement, more family conflicts, financial pressures and so on.

Some people love them, some people hate them..either way ONIONS have so many wonderful health benefits.

I love them added to stews, soups, salads and so much more. The cough syrup and the raw detox onion recipes in the link below are so worth trying if you have any kind of cold/cough/flu thingy going on OR you want to boost your immunity to prevent any such ailments. Prevention is better medicine than any cure.

If you can’t tolerate onions in your diet for some reason try leeks, spring onions, chives, radishes, garlic instead and try them raw and cooked as sometimes this can make a big difference to the tolerance factor. Onion Cough Syrup…

1 large onion peeled and finely diced.

A high quality local honey or Manuka honey. ( Do not use processed honeys as they have so few benefits and really are expensive glorified sugar!)

1 sterilised glass jam jar or equivalent size with tight fitting screw lid

Take a dessertspoon of the diced onion and place it in the bottom of the glass jar , add a teaspoon of honey on top, keep layering and alternating between the onion and honey until all the onion is gone and in the jar.  Place lid on the jar and turn upside down for an hour or so or until you see the juices coming out of the onion. Turn the right way up and turn a few times if necessary. Place in the fridge until ready to use. Strain if you wish to and keep the syrup in the fridge sealed for weeks. For coughs, sore throats etc take one teaspoon of the syrup three times daily.

Topical Onion Detox….

1 large onion peels and finely diced.

2 bags big enough to place your feet into

1 pair of big woolly cozy socks to wrap your feet into!

Method…prep the onion just before you are ready for bed, divide the diced onion into half, place one half in each plastic bag, place your feet into the bag on top of the onions, spread evenly as best as you can to cover the soles of the feet. Cover the bags with your socks to keep in place. Go to bed and sleep well…The following morning you will have cooked onions…Just place into your food waste bin!

This detox is really great anytime to do for a few nights while going to bed but especially if you feel a cold/infection coming on and if you have cough.

Swiss Onion Soup.

This lighter version of the traditional French recipe helps you to enjoy a good helping of onions with their wide-ranging health benefits.

Ingredients:

2 tbsp extra-virgin olive oil , butter or coconut oil.

500g (1lb 2 oz) onions, finely sliced

1 clove garlic, crushed

½ tsp brown sugar

1 litre (1 ¾  pints) meat or vegetable stock

Freshly ground black pepper

Sea salt or Himalayan Rock Salt to taste

4 slices wholegrain or Rye bread or alternative bread of choice.

25g (1 oz) freshly grated Gruyere or parmesan (optional) or vegan cheese options available in good health food stores or if you wish to skip the cheese altogether finely ground pine nuts can be a nice compliment too.

Method:

1.In a large , heavy-based pan, heat the oil and add the onions. They should make a thick layer. Stir then cook uncovered over a low heat for about 30 mins. Stir occasionally to prevent sticking and burning.

2.When the onions are golden and translucent, add the garlic and sugar. Meanwhile, bring the stock to the boil in a saucepan. Pour the boiling stock over the onions, stir well and, when bubbling, lower the heat and simmer, covered, for 20-30minutes. Season to taste.

3.Place a piece of bread sprinkled with cheese and parsley in each warmed bowl. Pour the soup over and serve.

Focus on moments of joy in your life…they are so important and we are surrounded by them but when we are running around so stressed out we don’t see them.  Moments of joy are like rays of sunshine peeping through the darkest of clouds.
